Tiny Apple Cheesecakes

  1. Preheat oven to 325u0b0.
  2. Place paper liners in eight (1/3-cup) muffin cups.
  3. Place a cookie in bottom of each; set aside.
  4. In a small skillet, melt butter.
  5. Add apples; cook and stir until tender, about 5 minutes.
  6. Sprinkle with 1 tablespoon sugar and cinnamon; spoon over cookies.
  7. With an electric mixer beat cream cheese, egg, sour cream, vanilla and remaining 5 tablespoons sugar until smooth.
  8. Spoon over apples. Bake until set, 25 to 28 minutes.
  9. Cool on a rack; remove cakes.
  10. Cover and refrigerate until cold, about 2 hours.
  11. Garnish with sour cream, apple slices and crushed vanilla wafers.
