Tiny Apple Cheesecakes
- 8 vanilla wafer cookies
- 1 c. chopped, peeled sweet apples
- 1/2 tsp. ground cinnamon
- 1 egg
- 1 tsp. vanilla extract
- 1 Tbsp. butter
- 6 Tbsp. granulated sugar
- 1 pkg. (8 oz.) cream cheese
- 1/3 c. sour cream
- Preheat oven to 325u0b0.
- Place paper liners in eight (1/3-cup) muffin cups.
- Place a cookie in bottom of each; set aside.
- In a small skillet, melt butter.
- Add apples; cook and stir until tender, about 5 minutes.
- Sprinkle with 1 tablespoon sugar and cinnamon; spoon over cookies.
- With an electric mixer beat cream cheese, egg, sour cream, vanilla and remaining 5 tablespoons sugar until smooth.
- Spoon over apples. Bake until set, 25 to 28 minutes.
- Cool on a rack; remove cakes.
- Cover and refrigerate until cold, about 2 hours.
- Garnish with sour cream, apple slices and crushed vanilla wafers.
