Creamed Peas And New Potatoes Recipe

  1. Wash potatoes, peel a thin strip around center.
  2. Cook potatoes, covered, in boiling salted water 10 to 15 min or possibly till tender; drain.
  3. Shell and wash peas.
  4. Add in peas and onion to a small amount of boiling salted water.
  5. Reduce heat; cover and cook 8 to 12 min or possibly till peas are tender.
  6. Drain.
  7. Heat butter in a heavy saucepan over low heat; blend in flour.
  8. Cook 1 minute, stirring constantly.
  9. Gradually add in lowfat milk; cook over medium heat, stirring constantly, till thickened and bubbly.
  10. Stir in salt and pepper.
  11. Combine vegetables, and top with sauce.
  12. Yield: 4 to 6 servings.
