Chicken and Shrimp Gumbo
- 1 **** every southern family has a recipe for gumbo. This is just ours. Any kind of meat can be used in it but we generally just do chicken, but my brothers friends wanted shrimp in it.!!!
- 1 **** GUMBO is African for okra .... so true gumbo is an okra stew.
- 1/4 cup veggie oil or bacon drippings
- 3 tbsp flour
- 2 chicken thigh (because of fat content)
- 2 tsp salt
- 1 tsp black pepper
- 1/2 large onion
- 1 clove garlic (1tsp minced)
- 10 cup water
- 2 stalks celery minced
- 15 medium shrimp (raw deviened, tail removed)
- 1 large can diced or crushed tomatoes
- 1 can rotel (tomatoes with green chilis).. drain the liquid and use the tomatoes and chilis.... the liquid holds a lot of heat..... w/o liquid is mild
- 1 clove garlic (1 tsp minced)
- 1/2 large onion
- 1 1/2 tbsp gumbo file
- 1 1/2 cup cooked rice (we add ours to the gumbo, but some people serve it on the side)
- 1 1/2 cup frozen sliced okra
- mince the onion .... put 1/2 the onion, chicken, celery, salt, pepper, garlic powder in 10 cups of water.
- boil for about 40 minutes... chicken should be fall apart tender.
- if u use a carton of broth add onion, pepper, garlic powder to a full carton of broth and boil
- remove chicken and set aside.
- make Roux with flour and oil or Bacon drippings.
- add garlic and onion and stir to release oil into drippings.
- add flour Roux mixture to pot of broth .... step back because it make steam up..
- while broth and Roux are cooking turn down to medium.
- and debone the chicken (remove skin and bone and discard.
- add both cans of tomatoes, okra, and let cook on Med for about 25 minutes.
- add chicken, shrimp, and gumbo file.
- let cook until shrimp is pink... stir well.
