Tomato Bacon Cups
- 1 whole Small Tomato
- 6 strips Bacon, Cooked (I Love The Pre-cooked Kind You Just Throw In The Microwave)
- 1 teaspoon Dried Basil
- 1/2 cups Swiss Cheese, Diced Into Small Pieces
- 1/2 cups Onion, Finely Diced
- 1/2 cups Mayonnaise
- 1 can Flaky Biscuits, Regular Sized, Not Grands (make Sure You Get The Kind With "flaky Layers")
- Preheat oven to 375.
- Chop up the tomato into small pieces.
- Crumble the bacon into small chunks (if it isnt crispy enough to crumble, you can cut it into pieces with kitchen shears).
- Mix the tomato, bacon, basil, cheese, onion, and mayo.
- Open the can of biscuits and carefully peel each biscuit into two or three thin layers.
- Press each layer into the bottom of a mini muffin tin to make little cups.
- Fill each cup with the tomato bacon mixture.
- Bake at 375 for 15 minutes, or until done.
- This mixture can be made ahead of time and kept in the fridge for a few days to cut down on prep time later.
