Tomato Bacon Cups

  1. Preheat oven to 375.
  2. Chop up the tomato into small pieces.
  3. Crumble the bacon into small chunks (if it isnt crispy enough to crumble, you can cut it into pieces with kitchen shears).
  4. Mix the tomato, bacon, basil, cheese, onion, and mayo.
  5. Open the can of biscuits and carefully peel each biscuit into two or three thin layers.
  6. Press each layer into the bottom of a mini muffin tin to make little cups.
  7. Fill each cup with the tomato bacon mixture.
  8. Bake at 375 for 15 minutes, or until done.
  9. This mixture can be made ahead of time and kept in the fridge for a few days to cut down on prep time later.
