Pumpkin Oatmeal
- 1 cup regular oatmeal or rolled mixed grains
- 1/2 tsp pumpkin pie spice
- 2 tbsp brown sugar
- 1/2 tsp pure vanilla extract (I add extra)
- 1/2 cup pumpkin puree (canned pure pumpkin)
- 1/2 cup vanilla soy milk (or regular soy or rice milk)
- 1 cup water
- 2 tbsp flaxseed meal (you can make it without this but it's a very healthy addition)
- Combine the oatmeal, water, milk and vanilla.
- Microwave until thick and hot.
- This may take 5 to 6 minutes more or less depending on your microwave.
- You can also simmer this on your stove top.
- Stir in the pumpkin, brown sugar, flaxseed and pumpkin pie spice.
- Mix well and enjoy.
