Veggies and Egg in a Bread Roll

  1. Preheat oven to 180C.
  2. Line a baking tray with baking paper.
  3. Cut tops from rolls.
  4. Scoop out centres, leaving a shell.
  5. Combine veggies and mayonnaise and spoon into rolls and shape a hollow.
  6. Carefully break an egg into each roll.
  7. Season with black pepper and sprinkle with chives, then cheese.
  8. Bake for 20-25 minutes or until the eggs are set.
  9. Sprinkle with extra chives and serve.
