Jambalaya

  1. Heat oil in cast iron skillet over medium heat.
  2. Cook meat until slightly browned.
  3. Add onions, celery, bell peppers, and garlic.
  4. Allow flavors to mix for about 15 minutes.
  5. Add chicken broth, bring to a boil, add rice.
  6. Add mushrooms, green onions, and parsley - then add the seasonings.
  7. Allow rice to cook for 25-30 minutes.
