Jambalaya
- 1 lb Pork
- 1 lb Chicken
- 1 lb Andouille sausage
- 1 cup Oil (canola or olive)
- 2 cup Onions (chopped)
- 2 cup Celery (chopped)
- 1 cup Bell peppers (chopped)
- 1/4 cup Garlic (diced)
- 6 cup Chicken stock
- 2 cup Mushrooms (sliced)
- 1 cup Green onions
- 1 cup Parsley (chopped)
- 4 cup Rice
- 1 tsp Cayenne pepper
- 1 tsp Oregano
- 1 tbsp Creole seasoning
- Heat oil in cast iron skillet over medium heat.
- Cook meat until slightly browned.
- Add onions, celery, bell peppers, and garlic.
- Allow flavors to mix for about 15 minutes.
- Add chicken broth, bring to a boil, add rice.
- Add mushrooms, green onions, and parsley - then add the seasonings.
- Allow rice to cook for 25-30 minutes.
