Amalfi Lemon Salad Recipe
- 5 x lemons, preferably Giant Amalfi thinly sliced on a mandolin or possibly with a sharp knife
- 1/2 c. flat leaf parsley leaves - (1 bunch)
- 1/2 c. extra-virgin extra virgin olive oil Salt to taste Freshly-grnd black pepper to taste
- On a large serving platter or possibly plate, arrange lemon slices in a single overlapping layer.
- Drizzle extra virgin olive oil over lemon, season with salt and pepper.
- Let stand for 30 min in order for flavors to become pronounced.
- Sprinkle parsley over lemons and serve immediately.
- This recipe yields 4 to 6 servings.
