For Valentine's Day Rich Truffles

  1. Finely chop up the chocolate.
  2. Line the mold with a sheet of parchment paper (or plastic wrap).
  3. Heat the whipping cream and mizuame in a pot.
  4. Turn the heat off when it's just about to boil.
  5. Pour it over the bowl from Step 1.
  6. Fold in with a rubber spatula.
  7. When cooled, add the brandy.
  8. Pour into the mold from Step 1.
  9. Chill in the fridge to harden.
  10. When hardened, cut the chocolate into desired sizes.
  11. Use a tea strainer to coat with the cocoa powder.
  12. Melt the chocolate in a double boiler if it's difficult to melt in Step 2.
  13. Please adjust the amount of brandy to your taste.
