Tex Mex Bean Salad
- 3 (14 ounce) cans mixed beans
- 1 small red onion, peeled and sliced
- 1 ounce cilantro, chopped
- 6 tablespoons garlic-flavored olive oil
- 2 tablespoons white wine vinegar
- 2 ounces tortilla chips, roughly broken
- Mix the beans, onion and cilantro together, then stir in the oil and vinegar with some seasoning.
- Top with the tortilla chips and serve immediately.
