Easy Quiche

  1. Parboil the spinach and cut into 3 cm pieces.
  2. Thinly slice the onions, bacon, and shiitake mushrooms.
  3. Heat butter (or margarine) in a frying pan and saute the onion, bacon, shiitake mushrooms, and spinach, seasoning with salt and pepper.
  4. Beat the eggs well to mix the yolks and whites.
  5. Add the milk to the eggs and mix in a bit of salt and pepper.
  6. Transfer the sauteed fillings from Step 2 into a heatproof dish and top with cheese.
  7. Pour Step 3's egg mixture on top.
  8. Bake in a oven for 15 minutes to finish The pictured quiche is a double batch for about 4 people made in a 23 cm dish In this case, 3 eggs and 80 ml of milk worked well!
