Chipotle Chili, Diabetic Friendly

  1. In large saucepan, cook ground beef and onion over medium heat until brown.
  2. Drain off fat.
  3. Stir in cumin and oregano; cook for 1 minute more.
  4. Add chipotle peppers, tomatoes, red beans, hominy, sweet pepper, and the water.
  5. Bring to boiling; reduce heat.
  6. Cover and simmer for 5 minutes.
  7. Top each serving with cheese.
