Angus Burger Bites with Red Onion Jam & Horseradish Mayo
- 2 packages 240g mini beef burger patties
- 1 large carrot, shaved strips (with potato peeler)
- 2 medium tomatoes, halved and sliced
- 1 large French bread stick, sliced
- 1 (Red Onion Jam)
- 5 Red onions, thinly sliced
- 1 Olive oil for cooking
- 1 tbsp Balsamic vinegar
- 1 tsp Dried thyme
- 1 tbsp Blackberry jam
- 2 tsp Minced garlic
- 1 (Horseradish Mayo)
- 2 cup Whole egg mayo
- 2 tsp Mustard powder
- 2 tbsp Minced horseradish
- 3/4 cup Grated Parmesan
- Mix mayo ingredients together and set aside.
- In a large fry pan on medium heat, add butter, onion and garlic.
- Fry until softening.
- Add thyme, balsamic vinegar and jam.
- Cook until moisture evaporates and mixture begins to thicken.
- Season and set aside.
- Cut patties in half and fry until cooked both sides.
- Spread some mayo, a layer of onion jam, carrot, tomato and a mini patty and stick it in your gob!
- YUUUUM!
- Makes heaps- serve with potato gems.
