Bean n Biscuit Casserole

  1. Heat oven to 400 degrees F.
  2. In a 10 inch oven proof skillet heat oil over medium heat and saute onions and garlic for about 3 minutes then add bell pepper and celery and saute for another 5 minutes.
  3. Add remaining bean ingredients and simmer while preparing biscuits.
  4. Add a little water if needed.
  5. In a medium bowl, combine flour, baking powder, and salt; stir to blend.
  6. Using pastry blender or fork, cut in margarine until its the consistency of coarse meal.
  7. Add milk; stir with fork just until a soft dough forms.
  8. Turn dough onto floured surface; sprinkle lightly with a bit of flour.
  9. Knead gently 10 to 12 times until the dough is no longer sticky.
  10. Roll or press to 1/2 inch thickness; then cut with a 2 inch biscuit cutter.
  11. Place a cheese cube in the center of each biscuit.
  12. Fold dough over cheese; seal well.
  13. Arrange biscuits over the hot bean mixture.
  14. Bake at 400 degrees F for 20 to 25 minutes or until biscuits are a deep golden brown.
  15. Serve immediately.
