Fruited Cabbage Salad

  1. Wash, dry and shred cabbage.
  2. Place in a wooden salad bowl and add salt and pepper.
  3. Add fruit to cabbage and sprinkle with raisins and nuts.
  4. Blend mayonnaise with cream, pour over salad and mix gently.
  5. Sprinkle with chopped parsley.
  6. Mayonnaise:.
  7. Blend egg yolks with wine vinegar, mustard powder, garlic, sea salt and freshly milled black pepper.
  8. Add vegetable oil, drop by drop.
  9. Then add olive oil in a steady stream then vegetable oil, beating constantly.
  10. When thickened, check seasonings.
  11. If you need to thin a mayonnaise add vinegar or milk.
  12. Store in a tightly closed glass jar in a refrigerator for up to 2 weeks.
