Smoked Salmon Quesadillas
- Cooking spray
- 8 small whole wheat tortillas (fajita size)
- 4 tablespoons cream cheese with chive and onion
- 8 ounces smoked salmon, thinly sliced (or smoked salmon fillets broken up into 1/2-inch pieces)
- 1 cup shredded Monterey jack cheese
- 4 tablespoons drained capers
- 4 tablespoons diced red onion
- Lemon wedges for garnish
- Coat a stove-top griddle or large skillet with cooking spray and preheat to medium-high.
- Spread one tablespoon of the cream cheese on four of the tortillas.
- Top cream cheese with salmon, Monterey jack cheese, capers, and red onion.
- Top with second tortilla.
- Arrange quesadillas on hot pan and cook 2 to 3 minutes per side, until cheese melts.
- Cut each quesadilla into 4 wedges and serve with lemon wedges on the side.
