Smoked Salmon Quesadillas

  1. Coat a stove-top griddle or large skillet with cooking spray and preheat to medium-high.
  2. Spread one tablespoon of the cream cheese on four of the tortillas.
  3. Top cream cheese with salmon, Monterey jack cheese, capers, and red onion.
  4. Top with second tortilla.
  5. Arrange quesadillas on hot pan and cook 2 to 3 minutes per side, until cheese melts.
  6. Cut each quesadilla into 4 wedges and serve with lemon wedges on the side.
