2 Crust Slice O Lemon Pie Recipe
- 11/4 c. sugar
- 2 Tbsp. flour
- 1/8 tsp salt
- 1/4 c. butter
- 3 x Large eggs
- 1 tsp grated lemon peel
- 1 med lemon
- 1/2 c. water
- Combine sugar, flour, and salt.
- Cut in butter, mix thoroughly.
- Reserving one tsp.
- egg white for crust, beat Large eggs well and add in to previous mix and blend till smooth.
- Cut peeled lemon into paper thin slices (about 1/3 c.).
- Add in water, rind, and slices to sugar mix and blend.
- Pour into bottom crust.
- Cover with top crust; brush with egg whites and sprinkle with sugar and cinnamon.
- Bake at 400 degrees for 30-35 minutes.
- This is good, also tart and pretty!
