Microwave Nutty-Caramel Corn

  1. In a large, glass, measuring cup, combine the sugar, syrup, salt, butter, and vanilla.
  2. Microwave on high for 1 minute.
  3. Stir and cook for 2 minutes.
  4. Add the baking soda and stir well (mixture will foam).
  5. Combine the popcorn and peanuts in a large brown paper bag.
  6. Pour the syrup into the bag and stir to coat.
  7. Turn the bag under to close and microwave on high for 1 minute.
  8. Transfer the caramel corn mixture to a baking sheet lined with waxed paper to cool.
  9. Store in an airtight container until ready to serve.
