Carnival Onion Marmalade
- 1 lb red onion (thinly sliced)
- 12 cup sugar
- 14 cup dry sack sherry wine
- 14 cup red Burgundy wine
- 14 cup apple juice
- 1 tablespoon soy sauce
- Place onions & sugar in a lrg non-stick skillet.
- Cook over med-heat (stirring often) till sugar melts & onions are caramelized (about 30 min).
- Add sherry, burgundy, apple juice & soy sauce.
- Cook till liquids are reduced & season lightly w/salt to taste pref (about 15 min).
