Champion Chili
- 3 each onions
- 2 each green chili peppers
- 2 each celery stalks large
- 2 each garlic cloves
- 1 each jalapeno pepper fresh
- 8 pounds beef chuck lean, coarsely ground
- 7 ounces green chili peppers diced
- 28 ounces tomatoes stewed
- 15 ounces tomato sauce
- 6 ounces tomato paste
- 6 ounces chili powder
- 2 tablespoons cumin
- 1 x red hot pepper sauce
- 12 ounces beer
- 12 ounces water
- 3 each bay leaves
- 1 x garlic
- Dice and saute the first five ingredients.
- Add the meat and brown it.
- Add the remaining ingredients, including half the beer (Annie sez to drink the remainder!
- ).
- Add water just to cover the top of the mixture.
- Cook about 3 hours on low heat, stirring often.
