Swiss Chard and Arugula Salad

  1. In a small skillet, melt butter and saute the almonds until they begin to turn golden.
  2. Remove from the pan with a slotted spoon and salt lightly.
  3. Toss the greens with the vinaigrette and divide among six plates.
  4. Sprinkle with the warm almonds and grate a little goat cheese over each salad.
  5. Serve.
