Rich chocolate cupcakes

  1. Preheat oven to 160C Celsius.
  2. Combine chocolate and water in a small saucepan.
  3. Cook, stirring continually, over a medium-low heat until the chocolate is completely melted.
  4. Remove from heat and allow to cool as you perform the following two steps.
  5. Cream the butter and sugar in a large bowl.
  6. Add the eggs one at a time, beating well after each addition.
  7. Combine flour, baking powder and cocoa powder in a separate bowl and whisk together to combine.
  8. Alternating between the flour and chocolate mixtures, add these to the creamed butter/sugar.
  9. Stir gently after each addition until just combined.
  10. Spoon into lined muffin trays.
  11. Bake at 160F for about 20 minutes (or until a toothpick comes out clean).
