Rich chocolate cupcakes
- 100 grams dark (semisweet) chocolate, chopped coarsely
- 1 cup water
- 1 cup brown sugar
- 125 grams butter
- 3 eggs
- 2 cup plain flour
- 3 tspn baking powder
- 1/4 cup cocoa powder
- Preheat oven to 160C Celsius.
- Combine chocolate and water in a small saucepan.
- Cook, stirring continually, over a medium-low heat until the chocolate is completely melted.
- Remove from heat and allow to cool as you perform the following two steps.
- Cream the butter and sugar in a large bowl.
- Add the eggs one at a time, beating well after each addition.
- Combine flour, baking powder and cocoa powder in a separate bowl and whisk together to combine.
- Alternating between the flour and chocolate mixtures, add these to the creamed butter/sugar.
- Stir gently after each addition until just combined.
- Spoon into lined muffin trays.
- Bake at 160F for about 20 minutes (or until a toothpick comes out clean).
