One Rib for Two

  1. Wrap the meat well and freeze until solid.
  2. Mix the oil and garlic and rub the mixture evenly over the frozen meat.
  3. Stand, rib bone down, on a rimmed baking sheet between the 2 potatoes, placed like book ends.
  4. Roast frozen, do not thaw.
  5. Roast in a preheated 400 oven 1 hour and 15 minutes for rare, 1 hour and 25 minutes for medium rare, 1 hour and 35-40 minutes for well done.
