Matzo Brei
- 4 onion & poppy matzos
- 2 cups warm water
- 1 cup cholesterol-free egg product
- 1 Tbsp. margarine or butter
- Break matzos into bite-size pieces into bowl.
- Pour warm water over matzos and pour off quickly.
- Press excess water out of matzos.
- Pour egg substitute over matzos, stirring until coated.
- Melt margarine or butter in large nonstick skillet over medium heat.
- Add matzo mixture; cook, stirring occasionally until mixture is set.
- Serve warm.
