My Mother's Ice Cream Biscuit Sandwich

  1. Add the jam and lemon juice to the heavy cream, and whip!
  2. You can make the cream in about 2 minutes.
  3. Whip until stiff peaks form because the cream will be easier to sandwich between biscuits.
  4. Spread the cream on a biscuit, then sandwich it with another biscuit.
  5. Chill in the freezer for about 1 hour.
  6. It's done.
