Grilled Veggie Medley
- 1 cup sliced frozen carrots
- 1 small onion minced
- 15 stick asparagus
- 2 medium potatoes (diced, cubed, sliced)
- 1 cup yellow squash (sliced)
- 1 cup zucchini (sliced)
- 2 stick celery
- 1 tbsp parsley
- 1/2 tsp thyme
- 2 tsp lemon juice
- 1 *** olive oil (can use veggie or canola) I used 2 TSP melted un salted butter
- 1 *** salt, pepper, amd garlic powder to taste
- melt the butter in the microwave for 30 seconds.
- set aside to let cool a little.
- put all the veggies in a bowl.
- sprinkle with olive oil or the butter.
- add spices.
- sprinkle veggies with salt, pepper, garlic powder.
- add lemon juice also
- mix veggies by hand and put them on 2 layers of aluminium foil.
- fold foil to make a foil pouch.
- will take the veggies about 30 -35 minutes to cook.
- so if they are placed on the grill get your meat almost before putting on the veggies.
- I've also put them in the oven to cook.
