Breakfast Pudding
- 1/3 cup oatmeal
- 1 cup low-fat milk
- 1 egg
- 1 banana, mashed
- 1 tsp. vanilla
- Mix together ingredients.
- Let stand for 10 minutes to allow oatmeal to soak up flavor.
- Stir again and place in a small oven-proof dish.
- Preheat oven to 325F.
- Sprinkle with cinnamon.
- Place dish in another oven-proof dish containing 1 inch of water.
- Bake 15 to 20 minutes or until firm.
