Brandied Berry Compote Recipe
- 4 ounce gooseberries
- 8 ounce blackcurrants
- 8 ounce redcurrants
- 8 ounce blackberries
- 8 ounce raspberries
- 4 Tbsp. blackcurrant juice
- 2 Tbsp. lemon juice
- 3 Tbsp. brandy
- 1 ounce powdered sugar
- 2 ounce toasted almonds
- 2 x mint sprigs
- 1/2 pt double cream whipped
- Place the prepared fruit in a serving bowl.
- Mix the blackcurrant juice, lemon juice and the brandy and pour over the fruit.
- Sprinkle with powdered sugar and refrigeratefor at least 4 to 6 hrs.
- When serving sprinkle with toasted almonds, garnish with mint sprigs and whipped cream.
