Swordfish Steaks with Maitre d'Hotel Butter

  1. Prepare Maitre d'Hotel Butter: Mix 1/2 cup butter or margarine, 2 tablespoons chopped fresh parsley, 1/4 teaspoon freshly grated lemon peel, 1 tablespoon fresh lemon juice.
  2. Prepare Swordfish Steaks: Preheat broiler.
  3. Place swordfish on rack in broiling pan.
  4. Spread 1/2 teaspoon Maitre d'Hotel Butter on each side of each fish steak.
  5. Place pan in broiler, 4 inches from heat source.
  6. Broil swordfish, without turning, until just opaque throughout, 8 to 10 minutes.
  7. Spoon pan juices over fish to serve.
