Swordfish Steaks with Maitre d'Hotel Butter
- 1/2 c. butter or margarine
- 2 tbsp. chopped fresh parsley
- 1/4 tsp. lemon peel
- 1 tbsp. fresh lemon juice
- 4 swordfish steaks
- 4 tsp. Maitre d'Hotel Butter
- Prepare Maitre d'Hotel Butter: Mix 1/2 cup butter or margarine, 2 tablespoons chopped fresh parsley, 1/4 teaspoon freshly grated lemon peel, 1 tablespoon fresh lemon juice.
- Prepare Swordfish Steaks: Preheat broiler.
- Place swordfish on rack in broiling pan.
- Spread 1/2 teaspoon Maitre d'Hotel Butter on each side of each fish steak.
- Place pan in broiler, 4 inches from heat source.
- Broil swordfish, without turning, until just opaque throughout, 8 to 10 minutes.
- Spoon pan juices over fish to serve.
