Apple Maple Bread Pudding

  1. Peel and core the apple, and cut it into chunks.
  2. Heat a couple of tablespoons of water in a small heavy pot, and toss in the apple.
  3. Lower the heat, cover, and cook, stirring a few times, for about 5 minutes, or until the apple is soft; if it isnt, cook a little longer, adding a splash more water if needed.
  4. Mix the bread pieces with the butter and maple syrup, then stir in the cooked apple.
  5. Transfer the pudding ingredients to a baking disha Pyrex one about 4 inches in diameter would be fine, as would a one serving shallow baking dish.
  6. Mix the sugar and cinnamon together, and sprinkle on top.
  7. Bake in a preheated 375 oven for 2025 minutes, or until bubbly and brown on top.
  8. Eat with heavy cream, if you like.
