Banana Pudding (From Scratch)

  1. Combine 1/2 cup sugar, flour and salt in top of double boiler.
  2. Mix in 1 whole egg and 3 egg yolks.
  3. Stir in milk.
  4. Cook, uncovered, over boiling water, stirring constantly, until thickened.
  5. Remove from heat; add vanilla.
  6. Spread small amount on bottom of 1-1/2 qt.
  7. casserole; cover with layer of Nilla Wafers. Top with layer of sliced bananas.
  8. Pour 1/3 of custard over bananas.
  9. Continue to layer wafers, bananas and custard to make 3 layers of each ending with custard.
  10. Beat remaining 3 egg whites until stiff, but not dry; gradually add remaining 1/4 cup sugar and beat until mixture forms stiff peaks.
  11. Pile on top of pudding covering entire surface.
  12. Bake in preheated hot oven (425u0b0) 5 minutes or until delicately browned.
  13. Serve warm or chilled.
  14. Yield:
  15. 8 servings of 3/4 cup.
