Turkey Stock

  1. Place turkey carcass in stockpot.
  2. Add enough water to cover carcass.
  3. Bring water to boil.
  4. Skim and discard foam from surface.
  5. Add remaining ingredients; stir.
  6. Simmer, partially covered, on medium-low heat 2 hours.
  7. Strain stock; discard bones and vegetables.
  8. Skim fat from stock.
