Aloha Ham Salad

  1. Drain pineapple, reserving 1 tbsp juice.
  2. In large bowl combine pineapple, rice, ham, water chestnuts and onion.
  3. Cover and chill for at least 2 hours.
  4. In a small bowl combine yogurt, salt (if using), and reserved pineapple juice.
  5. Pour over ham mixture and toss to coat.
  6. Stir in apple.
  7. Serve on lettuce lined plates sprinkled with macadamia nuts and coconut.
