Lemon Couscous
- 3/4 cup water
- 1/4 teaspoon freshly grated lemon zest
- 1 teaspoon vegetable oil
- 1/2 cup couscous
- 2 tablespoons chopped fresh chives
- In a small saucepan bring the water to a boil, stir in the zest, the oil, the couscous, and salt and pepper to taste, and let the mixture stand, covered, off the heat for 5 minutes.
- Fluff the couscous with a fork and stir in the chives.
