Chorizo butternut squash casserole
- 1 1/2 lb chorizo
- 1 1/2 lb butternut squash
- 6 large eggs
- 2 tbsp butter
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 14 oz coconut milk
- 1 tbsp baking powder
- 2 cup sharp cheddar cheese shredded
- 1/2 large onion, chopped
- 1 pinch salt
- Preheat oven 400 Fahrenheit.
- Peel and dice the squash.
- Remove the seeds.
- melt the butter in a pan and fry the onion and squash.
- Cook till tender add salt and pepper.
- Break up the chorizo.
- Add to squash.
- Cook till done.
- Beat the eggs add salt, and milk.
- Mix well.
- Add squash, chorizo mixture to an oven safe dish.
- Add baking powder to egg mixture and pour over squash mixtue mixing well.
- Add cheese on top bake in oven 35-40 minutes.
- Let rest 10 minutes covered.
