Chorizo butternut squash casserole

  1. Preheat oven 400 Fahrenheit.
  2. Peel and dice the squash.
  3. Remove the seeds.
  4. melt the butter in a pan and fry the onion and squash.
  5. Cook till tender add salt and pepper.
  6. Break up the chorizo.
  7. Add to squash.
  8. Cook till done.
  9. Beat the eggs add salt, and milk.
  10. Mix well.
  11. Add squash, chorizo mixture to an oven safe dish.
  12. Add baking powder to egg mixture and pour over squash mixtue mixing well.
  13. Add cheese on top bake in oven 35-40 minutes.
  14. Let rest 10 minutes covered.
  15. Serve I hope you enjoy!
