Buttermilk Cornbread Recipe

  1. Stir together dry ingredients.
  2. Separately, beat together egg, lowfat milk, and butter.
  3. Pour liquid ingredients into dry; stir only to moisten.
  4. Pour immediately into buttered 8" square pan.
  5. Bake at 425 degrees for 30 min.
  6. NOTES : Delicious variation to serve with barbecue: add in 2 Tbsp.
  7. finely minced jalapeno pepper (seeded, of course) to batter before baking.
