Buttermilk Cornbread Recipe
- 1 c. All-purpose flour
- 1 c. Cornmeal
- 1/4 c. Sugar
- 1 Tbsp. Double-acting baking pwdr
- 1 tsp Baking soda
- 1 x Egg
- 1 1/3 c. Buttermilk
- 3 Tbsp. Butter, melted
- Stir together dry ingredients.
- Separately, beat together egg, lowfat milk, and butter.
- Pour liquid ingredients into dry; stir only to moisten.
- Pour immediately into buttered 8" square pan.
- Bake at 425 degrees for 30 min.
- NOTES : Delicious variation to serve with barbecue: add in 2 Tbsp.
- finely minced jalapeno pepper (seeded, of course) to batter before baking.
