Cajun Chicken
- 1 lb. chicken breasts, cut in strips
- 2 Tbsp. olive oil
- 1 Tbsp. paprika
- 2 tsp. chili powder
- 1 tsp. onion powder
- 1/2 tsp. celery salt
- 1/4 tsp. salt
- 1/4 tsp. dry mustard
- 1/4 tsp. red pepper
- 1 cube chicken bouillon
- 1 Tbsp. cornstarch
- 10 oz. mushrooms, cut in 1/2
- 1 bunch scallions, in 1-inch lengths
- 2 Tbsp. chopped parsley
- Saute chicken in oil for 5 minutes; combine paprika and next 7 ingredients.
- Add to skillet for 1 minute, until chicken is cooked.
- Combine bouillon with 1 cup hot water; add cornstarch. Add to chicken mixture.
- Cook until slightly thickened.
- Add mushrooms and scallions; stir in parsley.
