Cheeseburger Soup
- 1 lb. (450 g) extra-lean ground beef Safeway 1 lb For $5.99 thru 02/09
- 1-1/2 cups chopped onions King Sooper's 1 lb For $0.99 thru 02/09
- 1 cup shredded carrots
- 3 cups 25%-less-sodium beef broth
- 3/4 lb. (340 g) potatoes, peeled, diced Safeway 2 pkg For $5.00 thru 02/09
- 1 tsp. dried dill weed
- 2 cups Cracker Barrel Shredded Double Cheddar Cheese, divided
- 1 cup milk
- Brown meat in large saucepan on medium-high heat.
- Remove beef from skillet, reserving 1 tsp.
- drippings in skillet.
- Add onions and carrots to reserved drippings; cook and stir 5 min.
- or until crisp-tender.
- Add broth, potatoes, dill weed and cooked beef and bring to a boil.
- Cover and reduce to a simmer; cook 12 min., or until potatoes are tender.
- Stir in 1-1/2 cups cheese and milk.
- Top with remaining cheese and serve.
