Laura Garlick's Concord Grape Pie
- 1 cup concord grapes, pulped, skinned, and seeded
- 4 eggs, separated
- 2 tablespoons flour
- 1 cup sugar
- 2 tablespoons water
- 12 teaspoon vanilla extract
- 1 unbaked 9-inch pie crust
- 4 tablespoons sugar for meringues
- Place the 4 egg yolks, flour, sugar, and butter in a large mixing bowl and beat until creamy.
- Add the grape pulp and skins and water and mix in thoroughly.
- Blend in the vanilla.
- Pour this mixture into the unbaked pie crust and bake in a preheated 350 F oven for about 20 minutes.
- Meanwhile beat the whites of the eggs until fluffy, adding 4 Tbs sugar and beating until soft peaks form.
- Spread over pie and continue to bake until meringue is brownish.
- Remove from over and let cool thoroughly before serving.
