Tabbouleh-Style Rice Salad
- 2 cups MINUTE Brown Rice, uncooked
- 2 cups chopped parsley
- 1 cup chopped tomato
- 2 Tbsp. finely chopped red onion
- 3 Tbsp. lemon juice Safeway 4 ct For $5.00 thru 02/09
- 2 Tbsp. olive oil
- 1/8 tsp. garlic powder
- salt and pepper
- Prepare rice as directed on package.
- Refrigerate 20 minutes.
- Stir parsley, tomato and onion into rice in large bowl.
- Stir together lemon juice, oil and garlic powder in small bowl.
- Toss with rice mixture.
- Season with salt and pepper to taste.
