Grilled Ratatouille Foil Packet

  1. Heat barbecue to low heat.
  2. Combine vegetables, garlic and 1/4 cup dressing; spoon onto large sheet of heavy-duty foil.
  3. Fold to make packet.
  4. Grill 45 min.
  5. or until vegetables are softened.
  6. Cut slits in foil to release steam before opening packet; drain vegetables in strainer.
  7. Place vegetables in large bowl.
  8. Add cheese, basil and remaining dressing; mix lightly.
  9. Serve warm or at room temperature.
