Down-Home Fried Rice
- 3 tablespoons canola oil
- 1 1/2 cups onions
- 4 each celery stalks
- 1 tablespoon ginger finely minced
- 4 cups long grain rice cooked
- 18 pound ham cured
- 1 pound shrimp
- 2 large eggs
- 2 tablespoons soy sauce, tamari
- 1/2 cup scallions, spring or green onions scallions %%%%
- Combine ingredients in a wok.
- Stir-fry for about 20 minutes, allowing flavours to blend.
- Serve with any garnishes you like.
