Benjamin's Flapjacks Recipe

• 1 1/4 c. flour
• 2 tsp baking pwdr
• 1/4 tsp salt
• 1/4 tsp apple pie spice
• 1/8 tsp soda
• 1 x egg, beaten
• 3/4 c. apple juice
• 2 Tbsp. honey
• 1 Tbsp. veg. oil

1. Stir together first 5 ingredients.
2. In a small bowl stir together egg, juice, honey and oil.
3. Add in all at once to flour mix.
4. Stir till blended but still lumpy.
5. Put 1/4 c. batter onto warm lightly greased griddle or possibly HEAVY skillet.
6. Watch closely.
7. Makes 8 (4-inch) flapjacks.
