Cheesy Pork Chop and Potato Casserole

  1. Wash pork chops ( I use 1/2 thick boneless chops).
  2. Season with salt and pepper.
  3. Brown them in a frying pan with a very small amount of oil, or use a nonstick pan with cooking spray.
  4. Peel and slice potatoes thinly.
  5. Chop the onion medium fine.
  6. Shred the cheddar.
  7. (You may buy it already shredded.)
  8. In a 2-quart baking dish (I use an 8x8 square dish since I use boneless chops), place the potatoes , then the browned chops.
  9. Mix soup, milk and onion together (the cheese you add on top will add some salt to this dish).
  10. Pour this soup mixture over the chops and potatoes.
  11. Sprinkle cheese over everything and bake uncovered at 375 degrees for 1 1/2 hours.
  12. You can count on this feeding 2 hungry people or 4 people with normal appetites.
  13. Add a salad or a fruit beside, or not, its a great dish alone, especially in the fall and winter.
