Grilled Chicken Sate With Peanut Dipping Sauce

  1. Combine soy sauce, lime juice, oil, ginger and garlic.
  2. Pour over chicken in nonmetal bowl.
  3. Marinate at room temperature for 30 minutes.
  4. If using wooden skewers, soak in water for 30 minutes first.
  5. Thread chicken on skewers, alternating with squash and lime wedges.
  6. Grill over hot fire 3 to 4 inches from heat, turning until browned, 3 to 4 minutes on each side.
  7. Serve hot or at room temperature with Peanut Dipping Sauce, Grilled Scallions and cherry tomatoes.
  8. Peanut Dipping Sauce:.
  9. Heat chicken broth, sugar, soy sauce, garlic, cayenne, cardamom, allspice and cloves to boiling in small saucepan.
  10. Cover and remove from heat.
  11. Let stand 5 minutes.
  12. Whisk in peanut butter and lime juice.
  13. Serve, warm or cold, with chicken sate.
  14. Sprinkle with chopped peanuts if desired.
  15. To grill scallions:.
  16. Clean 8 scallions and trim root ends.
  17. Brush with olive oil and grill 6 to 8 minutes, turning once or twice.
