Quick and Easy Red Quinoa Pilaf
- 2 cups Water
- 1 whole Sweet Onion, Chopped
- 6 cloves Garlic, Chopped
- 1 whole Carrots, Chopped
- 1 whole Tomato, Chopped
- 1 cup Green Peas
- 1 teaspoon Salt
- 1 Tablespoon Parsley Flakes
- 1 Tablespoon Italian Seasoning Herb Mix
- 1 cup Red Quinoa
- 1 head Fresh Broccoli, Cut Into Florets
- 2 Tablespoons Extra Virgin Olive Oil
- 4 quarts Lemon, To Drizzle Juice On Top
- Place the water in a saucepan and bring to a boil.
- Add the onion, garlic, carrots, tomato, green peas, salt, parsley and Italian seasoning and let it boil again.
- Add the red quinoa, reduce to simmer and cover the saucepan.
- After 10 minutes, add the broccoli florets and cover again.
- Cook until all water is absorbed (about 5 more minutes, or a total of 15 minutes after adding the quinoa).
- The grains should be soft and the red becomes translucent.
- Remove from the heat and add the olive oil.
- Serve warm or at room temperature with some lemon juice.
