Hot Mocha Pudding

  1. Cream butter and sugar until light and fluffy.
  2. Add unbeaten egg and vanilla, mix well.
  3. Sift flour, baking powder, cocoa and instant coffee.
  4. Add to the creamed mixture alternately with the milk.
  5. Place mixture into an 8-inch ovenproof dish.
  6. Topping: Mix together the sugar, instant coffee and cocoa.
  7. Sprinkle over the pudding.
  8. Then carefully pour over the 1-1/2 cups of hot water.
  9. Bake at 350F for 35-40 minutes.
  10. Serve hot.
