Blue Huckleberry Pudding Pie Recipe
- 3 c. huckleberries
- 1 c. water
- 1/2 c. white sugar
- 1/2 c. brown sugar
- 3 tbsp. quick tapioca
- 1/4 teaspoon salt
- 1/8 teaspoon cinnamon
- 1-2 tbsp. lemon juice
- Pastry for 2 crusts
- 1 tbsp. sugar
- 1/4 teaspoon cinnamon
- Cook and stir over medium heat the first 7 ingredients.
- Remove from stove and add in lemon juice.
- Line a pie plate with pastry and sprinkle with the 1 Tbsp.
- sugar and the 1/4 tsp.
- of cinnamon.
- Cut a top crust and put on a baking sheet.
- Bake both crusts for 8-10 min at 425 degrees.
- Cold.
- Fill with berry mix and add in top crust.
