Raspberry Cheesecake Brownie
- 200 g dark chocolate
- 200 g unsalted butter
- 250 g icing sugar
- 3 eggs
- 110 g plain flour
- 400 g cream cheese
- 150 g icing sugar
- 2 teaspoons vanilla extract
- 2 eggs
- 300 ml whipping cream
- 100 g icing sugar
- 150 g raspberries
- Preheat the oven (170 degrees centigrade/325 farenhite).
- Brownie:.
- 1) Melt the chocolate, until smooth.
- 2) Put the butter and sugar in a freestanding electric mixer, and beat until mixed.
- 3) Add the eggs one at a time, whilst continuously mixing.
- 4) Gradually beat in the flour.
- 5) Slowly add the melted chocolate.
- 6) Pour into prepared baking tray.
- Cheescake:.
- 1) Put the cream cheese, sugar and vanilla extract into a freestanding electric mixer.
- 2) Add one egg at a time and blend.
- 3) Spoon on top of the brownie.
- 4) Bake for 35 minutes.
- Icing:.
- 1) Put the cream, sugar and rasberries into a freestanding electric mixer and whisk until firm, but not stiff.
- 2) Spread evenly on top of the brownie cheesecake mix, once it has cooled.
- 3) Decorate with raspberries.
