Collard Greens Surprise

  1. Heat the oil in a large pot over medium heat.
  2. Add the onion and saute until translucent.
  3. Add the garlic and cook until fragrant (45-60 sec).
  4. Add the greens, water, smoked salt, cider vinegar, and Tabasco sauce.
  5. Season with black pepper.
  6. Increase the heat to medium high and bring to a boil.
  7. Decrease the heat to medium low, cover and cook until the greens are tender, 20-25 minutes.
  8. Taste and season with smoked salt and pepper.
